Simplified Thermal Modeling of Microwave Power Absorption of Plain Yogurt during Microwave Vacuum Drying

Abstract
Microwave energy abosrption of yogurt of thin slab shape was determined calorimetrically and expressed as a function of radiation time and moisture content. Power absorption of yogurt showed a quadretic relationship with both radiation time and moisture content. The quadratic model equation was used to calculate the internal heat generation and temperature/moisture content changes of yogurt during microwave vacuum drying at 30¡É to 50¡É. The overall calculated temperature/moisture content curves closely simulated the experimental values expcept those in the initial stage of drying.
